Coffee Cake Cookies
These coffee cake cookies are the perfect treat for the cold winter months. With a soft cinnamon cookie base and a streusel and icing topping these cookies will be ones that everyone enjoys!
Ingredients
Cinnamon Cookie Dough:
- ½ cup butter, softened
- ½ cup vegetable oil
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 2 tsp cinnamon (add more if desired)
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 ¼ cups flour
Streusel Topping:
- ¼ cup butter, softened
- ¼ cup brown sugar
- ⅓ cup flour
- ½ tsp cinnamon
- Pinch of salt
Icing (optional):
- ½ cup powdered sugar
- 1 tbsp milk
- Splash of vanilla
Baking Instructions
Dough:
- Begin by preheating your oven to 350 degrees.
- Combine the butter, vegetable oil, and brown sugar in a bowl, mix until smooth.
- Add egg and vanilla and mix again.
- Add the remaining ingredients and mix until just combined.
- Set aside and begin streusel.
Streusel:
- Add all of your streusel ingredients to a bowl.
- Mix until the mixture sticks together, but still crumbles in your hand (I recommend mixing with your hand or a spoon).
Putting it all together:
- Roll dough into medium-sized balls and place on nonstick or greased baking sheet.
- Using a spoon or your fingers make an indent in the center of each cookie.
- Sprinkle the desired amount of streusel on the cookie, making sure it stays on the cookie.
- Place cookies in the oven for 12-15 minutes, checking them periodically and adjusting the time if needed.
Icing:
- While cookies are in the oven, begin preparing the icing.
- Combine the powdered sugar, milk, and vanilla in a small bowl and whisk until smooth and runny (add more milk or powdered sugar to reach desired consistency).
- After the cookies have cooled slightly, drizzle the icing over the top.
